Flathead is a mild, sweet-flavoured fish that is low in oil with medium textured flesh that flakes finely. Flathead flesh is firm and holds together well when cooking. 

Flathead is ideal for frying, crumbing, steaming, baking, barbecuing, poaching, grilling and soups. Flathead often have a dry moisture level, so be careful not to dry out when cooking.

Our favourite way to prepare Flathead is battered or crumbed followed by deep-frying until golden brown and crispy, paired with some freshly fried chips and salad.
