Latchet also known as Red Gurnard is a mild, sweet-flavoured fish that is low in oil. Latchet has a firm, small textured flesh that holds together well when cooking.
Latchet is ideal for frying, crumbing, steaming, baking, poaching grilling and soups. However Latchet often has dry moisture levels, so be careful not to dry out when cooking.
